Dumdar Chana/Chhola Biryani Recipe | Aasan Vegetarian Biryani Ghar Par
Step 1: Chhola Tayaar Karna
Sab se pehle aadha kilo chhola achi tarah wash aur clean kar lein.
Phir chholay ko poori raat pani mein bhigo kar rakh dein.
Subah pani nikaal kar fresh pani mein boil karein jab tak chhola achi tarah soft ho jaye.
Boil hone ke baad chholay ko chaan kar side par rakh dein.
Step 2: Chhola Marination
Ab boiled chholay ko marinate karein.
Marination ke liye yeh ingredients use karein (quantity aadha kilo chhola ke hisaab se):
- Sounf
- Sabit dhaniya
- Dhaniya powder
- Paprika powder
- Garam masala powder
- Whole garam masala
- Dahi
- Brown onions
- Biryani masala
- Adrak lehsan paste
- Zeera sabit
- Zeera powder
- Haldi
- Namak
Note: Sab masalon ki quantity apne taste ke mutabiq rakhein.
Sab cheezen chholay mein achi tarah mix karein.
Cover karke 2 ghantay ke liye fridge mein rest den.
Step 3: Aloo aur Chawal
- Aloo apni pasand ke shape mein kaat lein
- Namak wale pani mein halka boil kar lein
- Chawal: Aadhe kilo chawal (4 persons ke liye)
- Chawalon ko bhigo kar namak aur thora sa food colour daal kar 70% tak boil karein
- Pani nikaal dein
Step 4: Biryani Layers
Ab degchi mein layering shuru karein:
- Pehle marinated chhola
- Phir boiled aloo
- Uske upar chawal
Upar se sprinkle karein:
- Podina ke patay
- Hari mirch
- Brown onions
- Kewra water – 1 tsp
Step 5: Dum
Degchi ko achi tarah cover kar dein.
Low flame par 20 minutes dum dein.
Jab khushboo aaye aur chawal perfect ho jayein, gas band kar dein.
Serving Tip
Chhola Biryani ko raita, salad aur lemon ke sath serve karein.
